Need Cocktail/Drink-Appetiser suggestions

Yo! Scooter Rally next weekend, and it is a camping one up in Guernville on the river! We're also welcome to get there however we like, so being the cushy-assed camper that I am, I'm just gonna drive my truck up and bring all my camping acoutremont.

Because I'm bringing crap-a-plenty I figured it would be fun to put on a little cocktail hour, with a drink and a complementary appetiser. 
But I'm having trouble coming up with something! 
The drink I'd like for it to be relatively easy to make (altho I like the idea of mojitos, they can be hard to make, unless I perhaps do a whole pitcher sans ice)
For appetiser, it's gotta be something cold really. I'm camping, won't have stove, oven etc. 

I thought of where you do bread topped with mozzerella, tomato, basil and olive oil, but couldn't come up with a cocktail to go with it, I kept thinking Sangria cause it's kinda spanish/italian?

Then, there is the Sat night food, which will be a big luau (pork, chicken etc), so I could do something themed with that. Maybe some kind of fruit salsa, or prosciutto wrapped melon, but not sure what cocktail would go with that - mai tai, jungle juice?

If you want a standard Italian wine, try chianti. Seems to be good at a few different price points.

sangria is always good! And easy and cheap, since it can be made with inexpensive wine. if you want to mix it up you can do a white sangria.

for tropical, my can't-fail easy cocktail is vanilla vodka & pineapple juice. it's soooo good.

hmmm, this one being so easy is sounding like a winner!!
Have to see if Costco has pineapple juice and the flavoured vodka or if I have to get that somewhere else...maybe I should just let what Costco has available steer my choices! ;)

Hmm...
If you'd like a tropical punch, there's the Sweet Lorraine:
one 750-mL bottle vodka
one 750-mL bottle Malibu rum
18 oz. Midori
30 oz. fresh squeezed OJ [i'm sure no one would hate you if it was from a container]
Float with slices of citrus and starfruit (you could also skip the floaters and do it in a couple of pitchers, easier for the camping)


If you want shots, on the Hawaiian theme there's the Hawaiian Sugar Plantation shot:
1/3 butterscotch schnapps
1/3 Amaretto
1/3 coconut rum


I've got a really ambitious one, the Honolulu Lulu, calling for dark rum, light rum, macadamia nut liquer(?), Kaluha, pineapple juice, lime juice and hibiscus syrup, served in a pineapple shell, but that wouldn't really work while camping, i don't think. On theme though! :)
